Every Christmas my sister in-law Bea bakes a massive tray of the most satisfyingly delicious cookies. And every year the entire family joins in a chorus of “Bea you should sell these cookies” as we dive in for one more Russian tea cake, M&M chocolate chip or my personal favorite peanut butter chocolate cookies.
Well last year Bea opened up an online site called To Bea Or Not To Bea’s Cookies where she sells them. Ah, all the flavor of Christmas and none of the work or dirty dishes.
So this year for Food Bloggers Los Angeles Christmas cookie and cookbook swap I brought a tray of Bea’s famous peanut butter cookies. Now you can do all the work and make these yourself or simply click over to her site and order a bunch. Trust me you won’t be disappointed.
Peanut Butter Cookies (4 dozen)
- 1 c. butter
- 1 c. peanut butter
- 1 c. white sugar
- 1 c. brown sugar
- 2 eggs
- 1 tsp. vanilla
- 2 1/2 c. flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 48 Circular dark melting chocolates (aka chocolate kisses)
- Heat oven 375°F. Cream butter(softened) and peanut butter together in big bowl. Then add white sugar and brown sugar into big bowl and mix together. Add eggs into big bowl and mix together. Then add vanilla into big bowl and mix thoroughly.
- In a separate bowl, add flour, baking soda, and salt and mix together. Put dry ingredients into the big bowl of wet ingredients. Make sure to mix ingredients well.
- Roll mixture into 1 ½ inch balls. Place on cookie sheet 2 inches apart. Bake for 8-10 minutes. (Until cookie is slightly golden around the edges). Immediately place melting chocolate on center of each cookie.
